  1. Whisk together 1 cup water, ½ cup vinegar, ¼ cup olive oil, 2 tablespoons sugar, 2 teaspoons salt and pepper.
  2. Add cucumbers, onions, and any other desired ingredients like garlic or parsley. Toss until the salt is coated.
  3. Cover in plastic wrap and refrigerate the dish for at least 3 hours, so it can absorb the marinade.

  • 1 pound cucumbers , approximately 2 cucumbers
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons kosher salt
  • 1/2 small onion , thinly sliced
  • 2 1/2 tablespoons red wine vinegar


  • Slice cucumbers thinly.
  • Toss the cucumber slices with the sugar and salt in a serving bowl and let stand for 5 minutes.
  • Add the onions and vinegar to the salad and toss until well coated.
