Fajitas are the perfect meal as far as I’m concerned. They have a ton of flavor and no carbs. So I always feel like I can load up my skillet with lots of bell peppers and onions, still have the “beefy” flavor because they’re all cooked together and keep my points low. Lots of people love Lettuce Wraps and this beef skillet recipe is the PERFECT one for lettuce wraps.

To make the lettuce wraps even more delicious top them with some fresh cilantro, it brings out a great flavor and makes them taste so fresh.  And if you want to top them with greek yogurt but want to tame the “tang” I suggest adding a bit of hot sauce, fajita seasoning or even taco seasoning. You can also puree with fresh cilantro and a bit of green onion to mask the “yogurt” flavor a bit more.

Ways to serve Beef Fajitas:

  • With tortillas as originally intended. I use corn or low carb ones with lower smart points.
  • With a large salad full of romaine, grape tomatoes, avocados, salsa, fat free greek yogurt (or fat free sour cream).
  • Cook some cauliflower rice with some additional fajita seasoning and a bit of salsa. Top with the beef fajitas.
  • Rolled in a corn tortilla with sharp cheddar cheese, ff sour cream and baked with enchilada sauce.
  • In lettuce cups or even in red bell pepper cups (red bell peppers are so sweet I’ve gotten hooked on this!) instead of tortillas.

Weight Watchers Beef Fajitas Recipe

Homemade Fajita seasoning:

  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • ¼ teaspoon white sugar
  • 1 teaspoon dried onion flakes (you can substitute onion powder)
  • ¼ teaspoon cayenne pepper (I use ½ teaspoon because we like a bit more spice)
  • 1 teaspoon ground cumin

Mix the ingredients together and store. This is good for 1-2 pounds of chicken/beef/fish.

Fun Fajita Vegetable Mix-Ins

  • MORE bell peppers.
  • Red onions instead of yellow, the sweetness is great and you can add as much as you’d like.
  • Zucchini (I cut these in strips instead of coins for fajitas)
  • Roma tomatoes cut into quarters lengthwise. Even better if you can cut it without exposing the seeds so they don’t get lost in the skillet.

Note: Just remember when you’re adding/bulking up the veggies you may want to consider making more of the fajita seasoning. You don’t want the flavors to become too muted.

Beef Fajita Skillet Recipe

Ingredients
 

  • tablespoon canola oil
  • 1 pound flank steak sliced thinly against the grain
  • 2 cloves garlic minced
  • 1 red bell pepper thinly sliced
  • 1 green bell pepper thinly sliced
  • 1 yellow onion thinly sliced
  • 2 teaspoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1/4 teaspoon white sugar
  • 1 teaspoon dried onion flakes you can substitute onion powder
  • 1/4 teaspoon cayenne pepper I use ½ teaspoon because we like a bit more spice
  • 1 teaspoon ground cumin
  • 1/2 cup chicken broth

Instructions

  • Add the steak to the cast iron skillet on medium high heat and sear 2 minutes on each side.
  • Remove the steak from the pan and add the canola oil, garlic, bell peppers and onions.
  • Cook for an 3-5 minutes, stirring occasionally.
  • Mix the remaining ingredients in a small bowl.
  • Add the broth/spice mixture to the pan with the veggies along with the and stir well.
  • Cook for an additional 2-3 minutes to allow the flavors to meld together well.
  • Add the steak into the pan and toss just before serving.
