Ingredients

For the Cake:

  • 1 1/2 cups 1% milk
  • 2 large eggs
  • 2 teaspoons pure vanilla extract
  • 1 cup sugar
  • 3 cups whole wheat flour
  • 1/4 teaspoon salt
  • 4 teaspoons baking powder

For Topping:

  • 1/4 cup butter , softened
  • 1/4 cup light brown sugar , packed
  • 2 teaspoons flour
  • 1 teaspoon ground cinnamon

For Icing:

  • 1/2 cup powdered sugar
  • 1 1/2 tablespoons low-fat milk
  • 1/4 teaspoon vanilla extract

Instructions

  1. Preheat oven to 350 degrees. Line a 9×13 baking dish with parchment paper, spray with baking spray, and set aside.
  2. Mix the milk, eggs, vanilla extract, and sugar in a medium mixing bowl.
  3. In a separate bowl, sift together the flour, salt, and baking powder.
  4. Gradually mix the flour mixture into the egg mixture. Pour batter into prepared baking pan.
  5. In a bowl, mix together all the topping ingredients, until small pebbles form. Sprinkle the pebbles over the top of the batter.
  6. Bake in oven for 30-35 minutes. Remove from oven and place on a cooling rack.

  7. In a small bowl, mix the powdered sugar, milk, and vanilla extract. Add milk in 1/2 teaspoon increments until icing is liquidy and pourable. After coffee cake has cooled, pour the icing evenly over the top of the coffee cake.
