Ingredients
 

  • 1/2 medium red onion , diced
  • 1/4 cup water
  • 1/4 cup olive oil
  • 1/2 cup red wine vinegar
  • 1 teaspoon Kosher salt
  • 2 teaspoons coarse ground black pepper
  • 1 large head iceberg lettuce , chopped into 1/2-inch square pieces, about 6 cups
  • 1 cup Roasted Marinated Peppers , cut into 1/2-inch pieces
  • 1/2 cup green olives , halved
  • 1/2 cup black olives , halved
  • 1 cucumber , peeled and sliced
  • 1/4 cup fresh dill , coarsely chopped and large stems removed

Instructions

  • To make the dressing, mix the red onion, water, oil, vinegar, salt and pepper in a small bowl and set aside, letting it sit at least 5 minutes to marinate.
  • In a large serving bowl, gently toss the lettuce, roasted peppers, olives, cucumber, and dill.
  • Toss salad with dressing.
