Ingredients
 

For salad:

  • 5 ounces fresh spinach
  • 1 apple , thinly sliced (Fuji or Braeburn work best)
  • 1/3 cup feta cheese , crumbled
  • 1/4 red onion , thinly sliced
  • 1/4 cup sliced almonds , toasted

For dressing:

  • 1/3 cup olive oil
  • 3 tablespoons red wine vinegar
  • 1 clove garlic , minced
  • 2 teaspoons dijon mustard
  • 1/4 teaspoon Kosher salt
  • 1/4 teaspoon coarse ground black pepper

Instructions

  • In a salad bowl, toss spinach, apple, feta cheese, red onion, and almonds.
  • Combine dressing ingredients in a mixing bowl. Pour dressing over salad, tossing gently to coat the salad.
