Whole Wheat Yogurt Blueberry Waffles are crispy on the outside, soft and fluffy on the inside with Greek Yogurt, and a mix of whole wheat and oat flours.

Ingredients
 

  • 1 1/4 cup buttermilk
  • 2/3 cup greek yogurt
  • 2 large eggs
  • 1 tablespoon sugar
  • 2 teaspoons vanilla extract
  • 1 teaspoon lemon juice
  • 1 cup whole wheat flour
  • 1 cup oat flour , (rolled oats in food processor)
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/4 teaspoon kosher salt
  • 1/2 cup blueberries

Instructions

  • Whisk together buttermilk, yogurt, eggs, brown sugar, vanilla extract, and lemon juice.
  • Sift together whole wheat flour, oat flour, baking powder, baking soda and salt.
  • Add dry ingredients to the wet ingredients and whisk until just combined.
  • Let sit for 5 minutes.
  • Gently mix in blueberries.
  • Scoop 1/4 cup of batter into small waffle maker and cook until crispy on the edges, about 3-4 minutes.
