  • 1 medium acorn squash
  • 1 tablespoon olive oil
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper


  1. Preheat oven to 400 degrees.
  2. Cut acorn squash in half and scoop out the seeds and threads.
  3. Season with olive oil, salt and pepper.
  4. Place the squash halves baking sheet, cut side facing up.
  5. Roast for 45 minutes to 1 hour, until tender.
