  • 2 large bananas , mashed (very ripe, about 1 cup)
  • 2 large eggs
  • 1/3 cup olive oil
  • 1/2 cup maple syrup
  • 1/4 cup orange juice
  • 2 teaspoons vanilla extract
  • 1 3/4 cups whole wheat flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg


  1. Preheat oven to 325 degrees and spray a 9×5" loaf pan with baking spray.

  2. In a large bowl whisk together mashed bananas, eggs, olive oil, maple syrup, orange juice, and vanilla extract.

  3. Sift together whole wheat flour, baking soda, cinnamon, salt and nutmeg then add it to the bowl of wet ingredients and whisk to combine.

  4. Pour the batter into your loaf pan and bake for 60-65 minutes until a toothpick comes out clean.

  5. Let cool before removing from loaf pan.
