Ingredients

  • 1/2 cup sugar
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/4 teaspoon baking soda
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/2 cups shredded zucchini , about 2 medium zucchinis
  • 1/2 cup chocolate chips

Instructions

  1. Preheat oven to 350 degrees and line muffin tin with muffin liners.
  2. Whisk together the sugar, oil, eggs, applesauce and vanilla extract in a large bowl.
  3. Whisk together the flour, cocoa powder, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients.
  4. Fold the shredded zucchini and chocolate chips into the batter until well combined.
  5. Using a 1/4 cup measure, add batter to muffin tin.

  6. Bake for 18-20 minutes.
