  • 1/2 cup sugar
  • 2 tbsp vegetable oil
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 tsp vanilla extract
  • 2 cups whole wheat flour
  • 2 tbsp unsweetened cocoa powder
  • 1 1/4 tsp baking soda
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp sea salt
  • 1 1/2 cups shredded zucchini
  • 1/2 cup chocolate chips


  1. Preheat oven to 350 degrees.
  2. Grease a 9x5 loaf pan with baking spray and set aside.
  3. Whisk together the sugar, oil, eggs, applesauce and vanilla extract in a large bowl.
  4. Whisk together the flour, cocoa powder, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients.
  5. Fold the shredded zucchini and chocolate chips into the batter until well combined.
  6. Pour the batter evenly into the loaf pan.
  7. Bake in the oven for 50-55 minutes. If a toothpick inserted into the center doesn't come out clean, bake for an additional 5-10 minutes.

  8. Remove the loaf pan to a wire rack to cool for 10 minutes.
