Ingredients
 

  • 1 cup rolled oats
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon cinnamon
  • 1/8 teaspoon salt
  • 1 cup 1% milk , or oat milk
  • 1 large egg
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 2 medium bananas , very ripe and chopped
  • 1 cup blueberries

Instructions

  • Preheat oven to 375 degrees.
  • Lightly spray a 12-cup muffin tin with baking spray.
  • In a large bowl mix together the rolled oats, baking powder, cinnamon, salt, milk, egg, honey and vanilla extract until well combined.
  • Gently fold in bananas and blueberries.
  • Using a 1/4 cup measure scoop the mixture into the muffin tin.
  • Bake for 20-25 minutes until golden brown.
