  • 1 medium acorn squash
  • 1 tablespoon unsalted butter , softened
  • 1/2 teaspoon Kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 3 tablespoons brown sugar


  1. Heat the oven to 400 degrees.

  2. Cut acorn squash in half and scoop out the seeds and threads.

  3. Spread the butter and season with salt and pepper.

  4. Sprinkle with brown sugar.

  5. Place the squash halves baking sheet, cut side facing up.

  6. Roast for 45 minutes to 1 hour, until tender.
