Ingredients
 

  • 2 large eggs
  • 12 ounces evaporated milk , (1 can)
  • 2 tablespoons flour
  • 2 teaspoons dry mustard
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 4 cups frozen corn
  • 1 red bell pepper , chopped
  • 1 yellow onion , chopped
  • 2 cups reduced-fat Swiss cheese

Instructions

  • Preheat oven to 350 degrees and spray a 2 quart baking dish with cooking spray.
  • In a large bowl, whisk together eggs, milk, flour, mustard, salt and pepper.
  • Add in the corn, red bell pepper, onion and cheese.
  • Pour into baking dish and bake 40-45 minutes.
