Loaded Sweet Potato Rounds are savory, crispy, and delicious. They're the perfect side or appetizer with cheddar cheese, bacon, chives, and sour cream.

Ingredients
 

  • medium sweet potatoes
  • 1 tablespoon vegetable oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 1 cup reduced fat cheddar cheese , shredded
  • 1/2 cup light sour cream
  • 4 slices bacon , cooked and crumbled
  • 1/4 cup chives , chopped

Instructions

  • Preheat oven to 400 degrees.
  • Peel sweet potatoes and slice into 1/2 inch slices.
  • Toss them with vegetable oil, salt and pepper, place on baking sheet.
  • Bake for 30 minutes until golden brown.
  • Top with cheddar cheese and bake an additional five minutes, until melted.
  • Add sour cream, bacon crumbles and chives just before serving.
