Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • 5 cups watermelon cut into 1" chunks
  • 2 cucumbers peeled and cut into 1" chunks
  • 1/4 cup red onion minced
  • 2 tablespoons mint chopped
  • 1/2 cup feta cheese crumbled

Instructions

  1. Add the olive oil, red wine vinegar and salt to a large bowl and whisk it together well.
  2. Add in the watermelon, cucumber, onion and mint and carefully toss together.
  3. Add the feta, toss gently to mix in the feta just slightly and serve.
