Preheat oven to 350 degrees and spray a muffin tin with vegetable oil spray.
Add the vegetable oil to a large skillet on medium high heat.
Add the onion, carrot, garlic, oregano, salt and pepper and cook for 3-4 minutes (stirring occasionally), then let cool.
In a large bowl add the onion-carrot mixture, 1/2 cup ketchup, ground beef, saltines, mustard, Worcestershire sauce and eggs and mix well.
Add the meatloaf mixture to your muffin tin into 12 scoops and top with remaining ketchup.
Bake for 25-30 minutes.
