Honey Chili Salmon

A Southwestern Honey Chili Salmon Bake made with honey, chili and lime baked with beans, corn and topped with grape tomatoes. A perfect diet friendly one pot dish.

Ingredients
 

  • 1 pound salmon filets cut into three portions
  • 1 1/2 tablespoons honey
  • 2 teaspoons chili powder
  • 1/2 teaspoon kosher salt
  • 1/2 lime zested and juiced
  • 1 cup corn
  • 1 cup canned black beans rinsed
  • 1/2 cup grape tomatoes halved
  • cilantro optional for garnish

Instructions

  • Preheat the oven to 425 degrees.
  • Add the salmon to the baking dish and top carefully with the honey.
  • Sprinkle on the chili powder, kosher salt and lime zest.
  • Add in the corn and the beans around the salmon.
  • Bake for 10-12 minutes.
  • Add the lime juice over the entire dish and garnish with grape tomatoes and cilantro (optional).
