Total Time 20 minutes

  • 1 tablespoons canola oil
  • 1 1/2 pounds shrimp peeled and deveined (13-15 count)
  • 1 tablespoon cornstarch
  • 2 teaspoon ginger minced
  • 3 garlic cloves minced
  • 1 orange juiced and zested
  • 2 tablespoons lite soy sauce
  • 1 teaspoon honey
  • 1/2 tablespoon rice wine vinegar
  • 1 carrot shredded
  • green onions for garnish

  • Add the orange zest, orange juice, soy sauce, honey and rice wine vinegar  to a small bowl and whisk until combined.
  • Add the shrimp to the cornstarch and coat well.
  • Heat your oil in a large frying pan over medium high heat.
  • In batches, cook the shrimp for 2-3 minutes on each side until brown and crisp.
  • Drain onto a plate (don't use paper towels or it'll steam on the paper towels).
  • Add the garlic and ginger to the pan and cook for 30 seconds.
  • Add the sauce back to the pan and add the shrimp and carrots on top.
  • Toss to combine and cook for 15-20 seconds or until the sauce has thickened (this will not take long, all the cornstarch on the shrimp will thicken it quickly).
  • Serve immediately, garnish with green onions if desired.
