Thai Chicken Larb Salad is an easy, healthy chicken dish full of fresh, Thai, citrus, herby flavors. Also great served in lettuce cups!

  • 1 tablespoon canola oil
  • 2 pounds ground chicken breast
  • 3 tablespoons fresh lemongrass minced
  • 3 green onions thinly sliced
  • 1 red onion thinly sliced
  • 3 tablespoons fish sauce
  • 1/2 cup fresh lime juice
  • 1 tablespoon chili garlic sauce
  • 1/4 cup mint leaves roughly chopped
  • 1/4 cup fresh cilantro roughly chopped
  • 1 cup curly kale thinly sliced (optional)
  • 1/2 cup bean sprouts


  1. Add the oil to a skillet on medium-high heat.
  2. Add the chicken to the skillet and cook breaking it apart.
  3. Once cooked through add the lemongrass, green onions, red onions and cook and stir for an additional 2-3 minutes.
  4. Add in the fish sauce, lime juice and chili garlic sauce and stir again.
  5. Toss with the mint leaves, cilantro, kale and bean sprouts.
