  • 4 pounds beef chuck roast , trimmed of all excess fat
  • 1 teaspoon kosher salt
  • 1/2 teaspoon coarse ground black pepper
  • 4 cups low sodium beef broth
  • 15 ounces diced tomatoes
  • 2 stalks celery , sliced thinly
  • 1 green bell pepper , diced
  • 1 yellow onion , diced
  • 1/4 cup tomato paste
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil


  1. Preheat oven to 325 degrees.
  2. Season beef with salt and pepper.
  3. In a large dutch oven on medium high heat, sear the beef on both sides, about 5-6 minutes each side.

  4. Add in the rest of the ingredients, stir well to combine.
  5. Cover, and cook in the oven for 3 hours.
