Chocolate Zucchini Muffins are a moist, rich and fudgy kid-friendly breakfast, that you'd never guess is healthy. Made with whole wheat, applesauce, cinnamon, semisweet chocolate chips and zucchini.

Ingredients
 

  • 1/2 cup sugar
  • 2 tablespoons vegetable oil
  • 2 large eggs
  • 1 cup unsweetened applesauce
  • 1/4 teaspoon vanilla extract
  • 2 cups whole wheat flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 1/4 teaspoon baking soda
  • 1 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon sea salt
  • 1 1/2 cups shredded zucchini , about 2 medium zucchinis
  • 1/2 cup chocolate chips

Instructions

  • Preheat oven to 350 degrees and line muffin tin with muffin liners.
  • Whisk together the sugar, oil, eggs, applesauce and vanilla extract in a large bowl.
  • Whisk together the flour, cocoa powder, baking soda, cinnamon, and salt. Gradually mix the dry ingredients into the wet ingredients.
  • Fold the shredded zucchini and chocolate chips into the batter until well combined.
  • Using a 1/4 cup measure, add batter to muffin tin.
  • Bake for 18-20 minutes.
