Ingredients
 

  • 4 large eggs
  • 4 large egg whites
  • 1/2 cup 2% milk
  • 4 cups fresh spinach
  • 1/2 cup Parmesan cheese
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 1/4 teaspoon paprika

Instructions

  • Preheat oven to 450 degrees and spray a muffin tin with vegetable oil spray.
  • Whisk together the eggs, egg whites, milk, spinach, Parmesan cheese, salt, pepper and paprika.
  • Pour egg mixture into muffin tins 2/3 of the way full.
  • Bake for 15-18 minutes or until golden brown.
