Chicken Meatballs in Marinara Sauce

Classic Baked Chicken Meatballs in Marinara Sauce are and the perfect healthy addition to a sandwich, bowl of noodles or veggie noodles!

Ingredients
 

Marinara Sauce:

  • 1 teaspoon olive oil
  • 1/2 yellow diced onion
  • 3 cloves garlic minced
  • 28 ounces crushed tomatoes
  • 6 ounces tomato paste
  • 2 teaspoons dried oregano
  • 2 teaspoons dried basil
  • 1 teaspoon Kosher salt
  • 1 teaspoon sugar
  • 1/4 teaspoon crushed red pepper
  • 1/2 cup water

Meatballs:

  • 1 pound ground chicken breast
  • 1 large egg
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup panko breadcrumbs
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon Kosher salt
  • Olive oil spray optional

Instructions

Marinara Sauce:

  • Add the olive oil to a dutch oven on medium high heat.
  • Saute the onion until just translucent, stirring often.
  • Add the garlic and stir for 30 seconds until you can smell it.
  • Add the rest of the ingredients, stir well and simmer, covered on low heat for 20 minutes.

Meatballs:

  • Preheat the oven to 375 degrees.
  • Add all the ingredients to a bowl and mix until just combined.
  • Roll the chicken mixture into 12 even meatballs and put them into a cast iron skillet.
  • Spray a quick 1 second burst of olive oil spray onto the meatballs and cook for 20 minutes.
  • Serve the meatballs with the sauce in your desired recipes.
