Ingredients
 

  • 3 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon kosher salt
  • 5 cups watermelon cut into 1" chunks
  • 2 cucumbers peeled and cut into 1" chunks
  • 1/4 cup red onion minced
  • 2 tablespoons mint chopped
  • 1/2 cup feta cheese crumbled

Instructions

  • Add the olive oil, red wine vinegar and salt to a large bowl and whisk it together well.
  • Add in the watermelon, cucumber, onion and mint and carefully toss together.
  • Add the feta, toss gently to mix in the feta just slightly and serve.
