Ingredients

  • 1/3 cup extra-virgin¬†olive oil
  • 2 lemons , juiced and zested
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • 1/4 teaspoon coarse ground black pepper
  • 2 avocados , cubed
  • 1 pint cherry tomatoes , halved
  • 1 cucumber , sliced into half circles
  • 1 cup corn
  • parsley , for garnish (optional)

Instructions

  1. Whisk together the olive oil, lemon juice, lemon zest, cumin, salt and pepper.
  2. Add the avocados, tomatoes, cucumber and corn to a large bowl and toss gently with dressing.
